It takes approximately 15 years for the female white sturgeon to mature and harvest the unmistakable large-grain roe. The egg pearls are usually dark grey, jet black, ebony and occasionally golden amber. The grain membrane is firm with a crystalline and shiny coat. Fruity notes and a delicate nutty hint follow the smooth and creamy flavor, all of which make Calvisius Elite an exceptional product. All our caviar is fresh (not pasteurized) with a 3-month shelf life, if unopened. Once opened, it is recommended consuming the caviar as soon as possible within 24 hours as off flavors can develop with exposure to air. Each tin has an expiration date on the bottom.
