Sevruga is smaller than Oscietra but it doesn't make its flavor less noticeable. It is harvested from Starry sturgeon, a small caviar-producing sturgeon that rarely exceeds 25 kg. It can be found in the Black Sea, Caspian Sea and D’Azov Sea, and all their main affluents: the Aegean and East Ionian Sea. This caviar boasts a rather aromatic flavor, the eggs are small (approx 2 mm) and their color varies from light to charcoal grey. This sturgeon is extremely delicate to breed and it takes on average 7-9 years to mature. All our caviar is fresh (not pasteurized) with a 3-month shelf life, if unopened. Once opened, it is recommended consuming the caviar as soon as possible within 24 hours as off flavors can develop with exposure to air. Each tin has an expiration date on the bottom.
