Fiorano Sangiovese “Fiorano” IGT 2015
The principal starting point of Fiorano’s wine-making practice is to work optimally in the vineyard, in order to obtain a product as healthy as possible, and to minimize intervention at the vinification stage, by combining tradition and technological innovation. Ruby red color, fresh red fruit aroma, a soft caramelised taste with a touch of acidity that renders it particularly agreeable. Very drinkable.
Marche IGT Sangiovese
Refining: 20 months aging in oak casks of 25 hl aging 6 months in bottle.
Matured with lees sediment in stainless steel with indigenous yeasts for 4 months, then refind in bottles for 4 months.
Serving temperature: 59-65 °F
Grapes hand-picked in crates and crushed and stemmed immediately. Light pressing of the bunches. Alcoholic fermentation for 15/18 days at controlled temperature < 25/28 °C in stainless steel tank with indigenous yeasts. Repeated light pumping-over of must and delestage. Spontaneous malolactic fermentation. Matured with lees sediment in stainless steel for 4 months, then refined in bottle for 4 months.
To produce our natural and organic wines, Fiorano uses natural methods of vinification of only our own organic grapes, without manipulation or addition of synthetic chemicals, and with respect for the natural maturation time of the wine.
Food Pairing Notes
Well paired with charcuterie and medium aged cheeses. Excellent also with pastas with meat or lighter sauces. Chicken cacciatore, or veal scaloppini? Just some ideas, the choice is yours!
