Nigredo Primitivo IGP 2013
Nigredo is a tale of passion and emotion: a starry night, a street in the making, a research that continues.The wine has a ruby red color and nuances of garnet red with moderate transparency. The nose mainly denotes fruit aromas such as black cherry, plum, and ripe fruit as well as hints of vanilla. In the mouth is intense and has good body, with tannins well balanced by alcohol. The finish is persistent with flavors of plum. The native grape variety with its mysterious origins expresses itself best only in the terroirs between Gioia del Colle and Acquaviva delle Fonti. In these lands Primitivo expresses its precise personality, rich and armonic, Chiaromonte knows how to highlight all of this!

The grapes are destemmed, then fed by gravity into tanks were they are left to ferment in whole clusters with their own yeasts before they are crushed in hand-cranks presses.
Serving temperature: 62-68ºF
With its high altitudes that give the wines great freshness and particular soils composed of red, iron-rich limestone soils, Gioia del Colle produces big wines that maintain outstanding balance, minerality, nuance, purity and complexity and is truly the source for the best Primitivos.
Bush-trained in the ancient, free-standing style known as alberello. As of 2009, all of the vineyards are certified organic.
Food Pairing Notes
Nigredo is made by dried grape lying under the sun. Notes of juicy cherry and red fruits, well balanced sweetness which is perfectly paired with red meats, aged cheeses, and furred game.
